Best recipe for German Pancakes

I often thought of writing "The Lazy Woman's Cookbook" but, I'm just too lazy. If I were to write this book, the following recipe would be on page one under "Super Easy Breakfast Recipes even a child will love".

First, I'll tell you about German pancakes. They are not like pancakes at all. They are not really like anything else, but their consistency is sort of like firm custard. I first had them when I went to breakfast with a neighbor who insisted I have them. They take 20 minutes to cook, and are not that common, so they are better suited to making at home.

The ones my children love have juice of about a half a lemon squirted on them, along with sugar. This is just as good as eating a lemon pie, so please give this recipe a try. It will become an family tradition. And it's nutritious too!

6 eggs
1 cup white flour
1 1/2 cup milk.

That's it! That's why I love this recipe! It's only 3 ingredients (I have not included the lemon juice, that comes after it's cooked).

Beat the eggs, add flour slowly, and then the milk. Use a beater or a blender to make sure it is beat until it's soupy (not lumpy). Pour it into a greased baking pan (mine is a ceramic rectangle about 9x13"). Bake at 415F for 20 minutes. It will puff up around the edges making a bowl shape. It does not run out of the pan. A knife inserted should come out clean.

Let it cool just a little and cut into 8 pieces. Sprinkle the lemon juice on it, and then sugar (you can use splenda also if you like that).

This is a really good dish for brunches also. You could try it with other toppings (raspberry jam?) but you will probably come back to using lemons.
